Instructions

  1. Preheat the grill or broiler.
  2. Heat a large skillet over medium-low heat, when hot add the olive oil, peppers and onions, tossing to coat well. Season with salt and black pepper, to taste; cover the pan and cook over medium-low heat, stirring occasionally until the vegetables are soft.
  3. Meanwhile, grill the sausage over medium heat, turning until golden and cooked through, about 10 to 15 minutes, careful not to burn until it’s cooked through. Set aside on a cutting board and slice sausage in half lengthwise. Place the cooked peppers and onions on a platter alongside the sausage. Serve with crusty bread.
  4. Note: To make this entirely on the grill, use a cast iron skillet and cook the onions and peppers over low heat with the grill covered until the onions and peppers are soft, stirring often, then set them aside and grill the sausage.
